You can find Ganki along the Thalassian Cliffs. The wild area is just north of Brical de Mar and connects it to Arisolla, where you’ll face your first Temtem dojo. They are quite common, so you shouldn’t be searching for too long. In fact, you should come across it naturally. The fact that temtems show up in twos boosts your chances as well.
